Best Breakfast ever!

I love easy, healthy,  tasty meals. Why not make meals ahead of time so you can eat healthy no matter what? I like making breakfast muffin omelets ahead of time.  They are so easy, absolutely decadent,  and packed with nutrients guaranteed to make you feel your best. I like to use a large muffin pan that makes 6 muffins instead of the regular size 12 muffin pan.  Its the perfect size for each muffin to be a 2 egg spinach cheese omelet muffin. It tastes great either hot or cold.  I use 12 eggs, 1 package of swiss cheese, 2 packages of spinach, bake 350 for about 40 minutes or until done. Plan ahead to eat healthy to feel fit forever.  #feelfitforever

  1. Hey Lorraine! Sounds delish! I do want to try out the muffin-pan-omelette thing someday. So what do you do with the ones that don’t get eaten right away? Refrigerate and heat/eat over the next few days, or freeze? I didn’t think egg things froze well, or do they?

    • Thanks so very much! I really appreciate it. I think you will enjoy it and hope you get to try other fillings you like too, the sky is the limit. Its great to switch up the type of veggie and cheese and make it your own special favorite omelet. I put my leftover muffin omelets in an airtight storage container in the fridge and eat them within 4 days or less, and they re-heat great in the microwave, or I have also enjoyed them right out of the fridge cold or packed as a great recovery food after a long training run. I have not yet put them in the freezer, they are so tasty, they never last that long ๐Ÿ™‚ And I love that you can just hold it and bite right into it, making them nice and portable. But I also like using a fork to eat it if I am home. But the freedom of being able to easily take them with you and eat them anywhere, even if you forget a fork, is great!
