Crock pot soup after a long run

What’s the best thing after a long run? A delicious and nutritious meal.  To come home to a house filled with enticing aroma is a simple pleasure of life we sometimes overlook. Crock pots are great.  All you have to do is put the food in before the long run and when you come home its ready depending on how long your run was and what foods you select.  Today I chose potato bean coconut milk soup and it smells and tastes heavenly.  It was easy too. All I did was use a couple of cans of navy beans, a can of unsweetened coconut milk,  potatoes,  and I added golden brown onions I sautéed in a separate pan in butter first then added it to the soup. The flavors all combine beautiful and really hit the spot on this cold day. My run this morning started with a temperature of only 30 degrees. The sun came out in gorgeous abundance when I finished my run but the temperature hadn’t changed much at that time. Any time of the year is a good time for soup but especially when it’s cold.  This soup provides everything a runner needs to refuel the body appropriately after a hard workout.  Potatoes have more potassium than the bananas most runners grab after a race or run. Beans provide a perfect way to get the protein you need plus lots of nutrients.  Athletes need more protein than non athletes.  A non athlete needs .37 grams per pound of body weight in protein per day. Protein needs go up the more you tax your body, so try different things and see what works best for you.  There are so many ways to get protein just make sure you get enough every day to feel fit forever.
